Recipe: Stuffed Beef Tomatoes

This is a dinner I absolutely adore. I’ve posted this recipe to go along with Chapter 3 of Falling Tears; one of my Twilight FanFictions.

Serves 4

Ingredients:
4 large beef tomatoes or 8 large ordinary tomatoes
3 oz (75g) wholemeal bread without crusts
8 oz (225g) minced beef
1 oz (25g) butter
1 medium onion, finely chopped
1 garlic clove, finely chopped
1 tablespoon chopped basil, or 1 teaspoon dried basil
1 tablespoon chopped thyme, or 1 teaspoon dried thyme
1 tablespoon chopped marjoram, or 1 teaspoon dried marjoram
1 tablespoon olive or sunflower oil

Method:

  1. Cut each tomato in half lengthways. Cut away the corse. Scoop out the seeds and flesh leaving shells about 1/4 inch (0.6cm) thick. Discard the seeds and chop the flesh finely. Soak the bread in a little cold water for 5 minutes.
  2. Put the beef into a bowl. Melt the butter in a small frying pan on a low heat. Put in the onion and garlic and soften them. Mix them into the beef. Squeeze the bread dry and crumble it into the beef. Add the herbs. Mix well, squeezing the mixture together with your fingers. Mix in the chopped tomato flesh.
  3. Pile the stuffing into the tomato shells. Use the oil to grease a shallow, ovenproof dish. Put in the tomatoes.
  4. Bake the tomatoes for 25 minutes, or until the filling is lightly browned on top and cooked through.
